Wightwick

About

The Ballarat Region is one of the coolest Australian mainland grape growing regions. The cool conditions allow for extended ripening periods resulting in later harvesting dates in comparison to most other Australian wine regions. Situated on top of the Great Dividing Range and being some distance from the coast, the climate is quite clearly continental. The final few weeks of ripening, which can extend into May, are generally quite cool, which helps to prevent cooked, over ripe, characters. The extended ripening period helps to produce wines that have more complex and savoury flavour profiles with firm directional structure.
